- 1 lb ground beef
- 3 garlic cloves, minced
- 1 cup diced onion
- 3 cups sliced zucchini
- 1 can diced tomatoes
- 1/4 cup chicken or beef broth
- 1/3 cup sour cream
- 2 Tbsp cream cheese
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp Worcestershire sauce
- 1.5 cups shredded cheddar cheese
Instructions
- Cook ground beef in a skillet over medium heat. Drain excess grease.
- Sauté diced onions until softened. Add garlic and cook for 1 minute.
- Add zucchini, diced tomatoes, and broth. Simmer 5 minutes.
- Stir in sour cream and cream cheese. Add beef back with Worcestershire, salt, and pepper.
- Sprinkle with cheddar cheese. Broil 3 minutes until bubbly.
- Serve hot.

- Add red pepper flakes for spice.
- Use turkey, chicken, or sausage instead of beef.
- Add mushrooms, bell peppers, or spinach for extra veggies.
