Description

A creamy, cheesy, and hearty zucchini ground beef casserole made in one skillet. Perfect for weeknights and packed with flavor.


Ingredients

Scale
  • 1 lb ground beef
  • 3 garlic cloves, minced
  • 1 cup diced onion
  • 3 cups sliced zucchini
  • 1 can diced tomatoes
  • 1/4 cup chicken or beef broth
  • 1/3 cup sour cream
  • 2 Tbsp cream cheese
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce
  • 1.5 cups shredded cheddar cheese

Instructions

  1. Cook ground beef in a skillet over medium heat. Drain excess grease.
  2. Sauté diced onions until softened. Add garlic and cook for 1 minute.
  3. Add zucchini, diced tomatoes, and broth. Simmer 5 minutes.
  4. Stir in sour cream and cream cheese. Add beef back with Worcestershire, salt, and pepper.
  5. Sprinkle with cheddar cheese. Broil 3 minutes until bubbly.
  6. Serve hot.

Notes

  • Add red pepper flakes for spice.
  • Use turkey, chicken, or sausage instead of beef.
  • Add mushrooms, bell peppers, or spinach for extra veggies.
