Description

Chocolate Covered Cherry Brownies are a decadent dessert combining chewy brownies, cherry buttercream icing, and rich chocolate ganache.


Ingredients

  • 3/4 to 1 1/2 sticks butter, melted
  • 2 tablespoons water
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1 1/3 cups flour
  • 3/4 cup baking cocoa
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips
  • 1 (12-ounce) jar CherryMan maraschino cherries (for icing)
  • 3/4 cup butter, softened (for icing)
  • 3 cups powdered sugar (for icing)
  • 1 1/2 tablespoons half-and-half or milk (for icing)
  • 1 1/2 tablespoons maraschino cherry juice (for icing)
  • 1 1/2 teaspoons almond extract (for icing)
  • 1 cup chocolate chips (for ganache)
  • 4 tablespoons butter (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 13×9-inch baking pan with foil and spray with cooking spray.
  2. Combine sugar, melted butter, and water in a large bowl. Stir in eggs and vanilla.
  3. In a separate bowl, mix flour, cocoa, baking powder, and salt.
  4. Gradually stir the flour mixture into the sugar mixture until well combined. Fold in chocolate chips.
  5. Spread batter into the prepared pan. Bake for 20–25 minutes or until a toothpick comes out clean. Cool completely.
  6. For the cherry icing: Drain and chop cherries, reserving juice. Cream butter, powdered sugar, half-and-half, cherry juice, and almond extract. Stir in chopped cherries.
  7. Spread icing over cooled brownies. Chill for at least 30 minutes.
  8. For the ganache: Microwave chocolate and butter in 30-second intervals, stirring until smooth. Spread evenly over icing.
  9. Let ganache set before cutting into squares.
