Description

Turkey Breakfast Sausage is a lean, flavorful recipe made with 99% ground turkey and pantry spices. These healthy sausage patties or crumbles are perfect for a protein-packed breakfast or meal prep. Easy to cook, freezer-friendly, and zero WW Points—ideal for busy mornings.

Ingredients

Scale
  • ¾ tsp ground sage

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp ground thyme

  • ¼ tsp garlic powder

  • ¼ tsp dried marjoram (or oregano)

  • ¼ tsp smoked paprika

  • ¼ tsp crushed red pepper flakes (optional)

  • 1 lb 99% lean ground turkey breast

Instructions

  • In a small bowl, mix all spices until evenly combined.

  • Add ground turkey to a large mixing bowl. Sprinkle in spice blend and mix with hands or fork until fully incorporated.

  • For deeper flavor, cover and refrigerate for 1 hour or overnight (optional).

  • To make patties: divide mixture into 8 equal parts (2 oz each) and shape into ½-inch thick patties.

  • Mist a skillet or griddle with cooking spray and preheat over medium heat. Cook patties 4–5 minutes per side, until golden and cooked through.

  • To make crumbles: cook turkey mixture in a sprayed skillet over medium heat, stirring and breaking apart until fully browned.

Notes

  • Don’t overmix the meat—it can make the sausage tough.

  • Use a thermometer to ensure patties reach 165°F internally.

  • These freeze well—perfect for make-ahead breakfasts.

  • Adjust spices to suit your flavor preference.

  • Reduce or omit red pepper flakes for a milder version.
