Description

Chewy Monster Cookies are soft, thick cookies made with rolled oats, peanut butter, chocolate chunks, and colorful M&M’s. A simple, crowd-pleasing treat that’s easy to make and full of fun textures and flavors.


Ingredients

3/4 cup (105g) all-purpose flour

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup (113g) unsalted butter, softened

3/4 cup (165g) packed light brown sugar

1/4 cup (60ml) smooth regular peanut butter

1 tablespoon (15ml) honey

1 large egg, at room temperature

1 teaspoon (5ml) pure vanilla extract

1 cup (100g) large flake rolled oats

2/3 cup (113g) dark chocolate chunks

1/3 cup (85g) regular M&M’s or other candy coated chocolate

1/3 cup (85g) mini M&M’s or other candy coated chocolate


Instructions

  • In a medium mixing bowl, combine the flour, baking soda, baking powder, and salt, then whisk until evenly blended.
  • In a large mixing bowl, cream the softened butter and brown sugar using a spatula until smooth, fluffy, and well combined—like wet sand.
  • Add in the peanut butter and stir until incorporated. Mix in the honey.
  • Beat in the egg and vanilla extract until the mixture is fully combined and creamy.
  • Stir in the oats until evenly distributed.
  • Gradually fold the dry flour mixture into the wet ingredients until just combined.
  • Fold in the dark chocolate chunks, regular M&M’s, and mini M&M’s.
  • Cover the bowl with plastic wrap, pressing it directly onto the dough’s surface, and refrigerate for 30 minutes.
  • Set your oven to preheat at 350°F (175°C), and line two large baking sheets with parchment paper.
  • Scoop out about 2 tablespoons of dough per cookie and roll into balls. Place onto prepared sheets, spacing them 2 inches apart.
  • Bake for 10-12 minutes until edges are golden and centers are slightly soft.
  • Let cool for 1 minute on the baking sheet, then transfer cookies to a wire rack to cool completely.

Notes

For a nut-free version, use sunflower seed butter.

Chill the dough to help cookies hold their shape and boost flavor.
