Description
Sweet Alabama Pecan Bread is a moist, sweet Southern-style treat loaded with pecans and made with simple pantry staples. Perfect for brunch, dessert, or an afternoon snack.
Ingredients
1 cup granulated sugar
1 cup brown sugar (packed)
4 large eggs, beaten
1 cup vegetable oil
1ยฝ cups self-rising flour
1 teaspoon vanilla extract
2 cups pecans, finely chopped
Instructions

Preheat your oven to 350โฏยฐF (175โฏยฐC). Grease and flour (or spray) a 9ร13 inch baking dish.

In a medium bowl, combine the granulated sugar, brown sugar, beaten eggs and vegetable oil. Stir until smooth.

Stir in the selfโrising flour until just incorporated. Then add the vanilla extract and mix.

Fold in the finely chopped pecans so they are evenly distributed throughout the batter.

Spoon the batter into the prepared baking dish, smoothing the top.

Bake in the preheated oven for about 30โ35 minutes, or until a toothpick inserted in the center comes out mostly clean (a few moist crumbs are ok).

Remove from oven and let cool in the dish for at least 10โ15 minutes before slicing into squares and serving.
Notes
Substitute self-rising flour with 1ยฝ cups all-purpose flour + 2ยผ tsp baking powder + ยผ tsp salt.
Toast pecans for extra depth of flavor.
Store in an airtight container for up to 3 days or freeze for longer shelf life.
