Description

Soft Peppermint Meltaways are buttery cookies with a light peppermint flavor. Made from simple ingredients, they have a melt-in-your-mouth texture and are ready in just 20 minutes.


Ingredients

  • ⅓ cup unsalted butter, very soft room temperature
  • ⅓ cup sweetened condensed milk
  • ½ teaspoon peppermint extract
  • 1 cup cornstarch, plus 1 to 2 tablespoons
  • 1 cup powdered sugar, sifted
  • 1 ½ tablespoons unsalted butter, melted and cooled
  • 1 ½ tablespoons heavy cream
  • to ¼ teaspoon peppermint extract
  • Peppermint candies, crushed

Instructions

  1. Preheat oven to 350° F. Line a baking sheet with parchment paper.
  2. In a bowl, mix butter, condensed milk, and peppermint extract until smooth.
  3. Add cornstarch and mix until fully incorporated.
  4. Scoop dough onto baking sheet, spacing 2 inches apart.
  5. Bake for 10-12 minutes until lightly golden.
  6. Let cookies cool on the sheet for 5 minutes before transferring to a rack.
  7. For the frosting, combine powdered sugar, melted butter, cream, and peppermint extract.
  8. Beat until thick and smooth. Adjust consistency with cream or powdered sugar if needed.
  9. Frost each cookie and garnish with crushed peppermint candies.
