This Skillet Beef Tamales recipe transforms classic tamale flavors into an easy one-pan meal. With seasoned beef, salsa, corn tortillas, and creamy cheese, it’s a quick Tex-Mex dinner perfect for busy nights.
Ingredients
1 pound lean ground beef (90% lean)
1 cup frozen bell pepper mix
2 cups salsa (mild or medium)
1 cup frozen corn
1 can (10.5 ounces) Campbell’s Fiesta Nacho Cheese condensed soup
6 corn tortillas, cut in half and then sliced into 1-inch pieces
1 cup shredded cheddar cheese
Instructions
Cook the beef: In a large skillet lightly coated with nonstick cooking spray, brown the ground beef over medium heat for 6–8 minutes, breaking it apart as it cooks. Make sure it reaches an internal temperature of 160°F.
Add vegetables and sauce: Stir in the frozen bell peppers, salsa, corn, and nacho cheese soup. Bring the mixture to a gentle simmer.
Incorporate tortillas: Stir in the tortilla squares, mixing well to combine all the flavors.
Simmer: Reduce the heat to low, cover the skillet, and let it simmer for 10–15 minutes until the tortillas are tender.
Add cheese: Sprinkle the cheddar cheese evenly over the top. Cover again and cook for an additional 2–3 minutes until the cheese is fully melted.
Rest and serve: Allow the dish to rest for 5 minutes before serving so the flavors can fully develop.
