Ingredients
1 teaspoon salt, divided
1/2 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon dried thyme leaves
1/4 teaspoon ground black pepper
1 pound (454g) boneless, skinless chicken thighs
2 tablespoons unsalted butter
1 tablespoon light or dark brown sugar
2 cups (250g) apple slices (1/4-inch-thick, unpeeled)
1/3 cup (40g) chopped shallots (or yellow onion)
1/3 cup (80ml) apple cider (not apple cider vinegar)
Optional: fresh thyme and rosemary for garnish
Instructions
- Heat a 12-inch skillet (cast iron preferred) over medium heat. Add a light drizzle of oil and swirl to coat.
- Mix 3/4 teaspoon salt, coriander, cinnamon, nutmeg, thyme, and pepper in a small bowl. Rub the spice mix evenly on both sides of the chicken.
- Add chicken to the skillet and cook for 5 minutes per side, or until the internal temperature reaches 165ยฐF (74ยฐC). Remove and set aside.
- In the same skillet, melt the butter. Add brown sugar, apple slices, shallots, and remaining 1/4 teaspoon salt. Sautรฉ for about 5 minutes until apples soften.
- Pour in the apple cider and stir occasionally. Simmer for around 5 minutes, or until the sauce thickens slightly.
- Return the chicken to the skillet and simmer for another 2 minutes.
- Remove from heat. Spoon the apple mixture over the chicken. Garnish with fresh thyme or rosemary, if using.
Notes
Use a cast iron skillet for the best results. The sauce will thicken as it cools and reheats well. Store leftovers in the fridge up to 3 days. For the best flavor, stick with chicken thighs and fresh apple cider.
