Ingredients
1 rotisserie chicken (approx. 3 lbs), shredded and chopped
1 cup mayonnaise
1/3 cup Dijon mustard
1 tsp smoked paprika
1 tsp garlic powder
2 hard-boiled eggs, chopped
1 celery stalk, diced
1 bell pepper, diced
Kosher salt, to taste
Freshly ground black pepper, to taste
6 croissants, split
Instructions
Remove chicken skin and bones. Shred and chop the meat.
Mix mayonnaise, Dijon mustard, paprika, and garlic powder in a large bowl.
Fold in chopped eggs, celery, and bell pepper.
Add shredded chicken and mix until evenly coated.
Season with salt and pepper to taste.
Refrigerate for 30 minutes.
Serve on croissants.
