Ingredients
2¼ cups chopped rhubarb (½” pieces), divided
1 large egg
1 cup buttermilk
½ cup vegetable oil
1 cup granulated sugar
1 tbsp pure vanilla extract
2 cups all-purpose flour
2 tsp baking powder
1 tsp ground cinnamon
½ tsp kosher salt
1 tbsp fresh orange zest
Topping:
1 tbsp sugar
¼ tsp cinnamon
Instructions
Preheat oven to 350°F. Grease and line a 9″x5″ loaf pan with parchment.
Whisk egg, buttermilk, oil, sugar, and vanilla in a large bowl.
In another bowl, mix flour, baking powder, cinnamon, salt, and zest.
Fold dry ingredients into wet mixture until just combined.
Stir in 2 cups of chopped rhubarb.
Pour batter into prepared pan and smooth the top.
Press remaining ¼ cup rhubarb into the top of the batter.
Mix sugar and cinnamon; sprinkle over the top.
Bake for 65–70 minutes, or until a toothpick comes out clean.
Cool in pan 20 minutes, then transfer to a rack to cool completely.
Notes
Use crisp, red rhubarb stalks for best flavor.
Avoid overmixing to keep the texture light.
Substitute orange zest with lemon for a citrus twist.
