Ingredients

  • 2¼ cups chopped rhubarb (½” pieces), divided

  • 1 large egg

  • 1 cup buttermilk

  • ½ cup vegetable oil

  • 1 cup granulated sugar

  • 1 tbsp pure vanilla extract

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1 tsp ground cinnamon

  • ½ tsp kosher salt

  • 1 tbsp fresh orange zest

  • Topping:

    • 1 tbsp sugar

    • ¼ tsp cinnamon


Instructions

  • Preheat oven to 350°F. Grease and line a 9″x5″ loaf pan with parchment.

  • Whisk egg, buttermilk, oil, sugar, and vanilla in a large bowl.

  • In another bowl, mix flour, baking powder, cinnamon, salt, and zest.

  • Fold dry ingredients into wet mixture until just combined.

  • Stir in 2 cups of chopped rhubarb.

  • Pour batter into prepared pan and smooth the top.

  • Press remaining ¼ cup rhubarb into the top of the batter.

  • Mix sugar and cinnamon; sprinkle over the top.

  • Bake for 65–70 minutes, or until a toothpick comes out clean.

  • Cool in pan 20 minutes, then transfer to a rack to cool completely.

Notes

  • Use crisp, red rhubarb stalks for best flavor.

  • Avoid overmixing to keep the texture light.

  • Substitute orange zest with lemon for a citrus twist.
