Peaches and Cream Freeze Bars are a no-bake dessert with a buttery vanilla wafer crust, creamy peach filling, and whipped cream topping. Perfect for summer gatherings, these bars are easy to make, refreshing, and a great make-ahead treat.
Ingredients
For the crust:
8 tbsp (1 stick) unsalted butter, melted and cooled
50 vanilla wafer cookies (about 6 ½ oz)
2 tbsp granulated sugar
½ tsp kosher salt
For the filling and garnish:
12 oz fresh peaches, unpeeled, quartered, and pitted (about 4 medium)
1 (14-oz) can sweetened condensed milk
¼ tsp kosher salt
2 cups cold heavy cream
12 peach slices, for garnish
Instructions
Line an 8-inch square pan with parchment, leaving overhang for easy removal.
In a food processor, pulse vanilla wafers, sugar, and salt into fine crumbs. Remove 1 tbsp for garnish.
Add melted butter and pulse to combine. Press mixture firmly into the pan to form an even crust.
Puree peaches in the food processor, then blend in sweetened condensed milk and salt. Transfer to a large bowl.
Whip heavy cream until soft peaks form. Reserve ½ cup for garnish. Gently fold the rest into the peach mixture.
Spread filling over the crust. Cover and freeze for at least 5 hours or overnight.
Lift out of the pan, cut into 12 bars, and top with reserved whipped cream, crumbs, and a peach slice.
Notes
For a shortcut, use frozen peach slices (no need to thaw).
Press the crust firmly to prevent crumbling when slicing.
Dip the knife in warm water between cuts for clean slices.
Freeze leftovers in an airtight container for up to 1 week.
