Description
This Peach & Blueberry Cobbler is the perfect blend of juicy summer fruit and buttery oat crumble. Easy to make and great for gatherings.
Ingredients
8 ripe peaches, peeled and chopped
1 cup fresh blueberries
1 tbsp sugar
2 tbsp lemon zest
2 tbsp lemon juice
1½ tbsp all-purpose flour
For the topping:¾ cup brown sugar
1 cup rolled oats
¾ cup all-purpose flour
1 tsp cinnamon
½ cup (1 stick) cold butter, diced
Instructions
Preheat oven to 350°F.
Blanch peaches for 30 seconds, cool in ice water, peel and dice.
Mix peaches, blueberries, sugar, lemon zest, lemon juice, and flour.
Combine brown sugar, oats, flour, cinnamon, and cold butter until crumbly.
Grease a 9×13 baking dish, add fruit, and sprinkle topping.
Bake 50–60 minutes until topping is golden and fruit is bubbling.
Cool 10 minutes before serving.
Notes
For crispier topping, chill crumble before baking.
Substitute with other fruits like nectarines or raspberries.
Best served warm with ice cream.
