Ingredients
For the Ice Cream:
8 oz full-fat cream cheese (room temperature)
Zest of 1 lemon
1 cup full-fat sour cream
½ cup half-and-half
⅔ cup granulated sugar
Pinch of kosher salt
For the Cookies:
1 cup unsalted butter (softened)
⅔ cup granulated sugar
2 cups all-purpose flour
¼ tsp kosher salt
4 tbsp cocoa powder
2 tbsp red food coloring (1 oz)
1 tsp vanilla extract
Red sanding sugar for topping
Instructions
Blend cream cheese, lemon zest, sour cream, half-and-half, sugar, and salt until smooth. Chill 1 hour.
Churn in an ice cream maker, spread in parchment-lined 9″ pan, and freeze 2 hours.
Cream butter and sugar. Mix in flour, salt, cocoa, food coloring, and vanilla. Divide dough, chill 2 hours.
Roll dough ¼″ thick, cut star shapes, and bake at 350°F for 11–13 minutes. Cool on a rack.
Cut ice cream into stars using the same cutter (dipping in hot water helps).
Sandwich ice cream between two cookies and freeze until firm.
Notes
You’ll have extra cookies—perfect for snacking. Add ½ tsp vinegar for classic red velvet taste. Try other shapes or flavors to customize for different occasions.
