Description

  • For the Ice Cream:

  • 8 oz full-fat cream cheese (room temperature)

  • Zest of 1 lemon

  • 1 cup full-fat sour cream

  • ยฝ cup half-and-half

  • โ…” cup granulated sugar

  • Pinch of kosher salt

For the Cookies:

  • 1 cup unsalted butter (softened)

  • โ…” cup granulated sugar

  • 2 cups all-purpose flour

  • ยผ tsp kosher salt

  • 4 tbsp cocoa powder

  • 2 tbsp red food coloring (1 oz)

  • 1 tsp vanilla extract

  • Red sanding sugar for topping


Instructions

  1. Blend cream cheese, lemon zest, sour cream, half-and-half, sugar, and salt until smooth. Chill 1 hour.

  2. Churn in an ice cream maker, spread in parchment-lined 9โ€ณ pan, and freeze 2 hours.

  3. Cream butter and sugar. Mix in flour, salt, cocoa, food coloring, and vanilla. Divide dough, chill 2 hours.

  4. Roll dough ยผโ€ณ thick, cut star shapes, and bake at 350ยฐF for 11โ€“13 minutes. Cool on a rack.

  5. Cut ice cream into stars using the same cutter (dipping in hot water helps).

  6. Sandwich ice cream between two cookies and freeze until firm.


Notes
