Ingredients
2 cups finely crushed graham crackers
6 tablespoons unsalted butter, melted
1 cup granulated sugar, divided
32 ounces cream cheese (4 packages), softened
1 small box (3 ounces) peach-flavored JELL-O gelatin
1 tub (8 ounces) frozen whipped topping, thawed
2 fresh peaches, finely diced (peeled or unpeeled)
Instructions
Combine graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press into a 9×13-inch dish and refrigerate.
In another bowl, beat cream cheese with remaining 3/4 cup sugar until smooth. Mix in dry peach JELL-O.
Fold in whipped topping and diced peaches.
Spread mixture over crust.
Chill for 4 hours until firm. Slice and serve chilled.
Notes
Use room temperature cream cheese for best results. For more peach flavor, add peach extract or extra peaches. You can also swap in canned or frozen peaches (well drained).
