Mediterranean Sweet Potato Appetizer Bites are vibrant, easy-to-make snacks topped with hummus, juicy tomatoes, feta, and basil. A perfect healthy bite-size appetizer for parties, potlucks, or weeknight entertaining.
Ingredients

2 medium sweet potatoes, sliced into ยฝ-inch thick rounds

2 teaspoons extra virgin olive oil, divided

ยฝ cup roasted garlic hummus

1 cup diced ripe tomatoes

ยผ cup crumbled feta cheese

2 tablespoons fresh basil, finely chopped

Salt and freshly ground black pepper, to taste
Instructions

Preheat oven to 400โฏยฐF (200โฏยฐC) and line a baking sheet with parchment paper or foil.

Toss sweet potato rounds with 1 tsp olive oil, salt, and pepper.

Arrange on the sheet in a single layer; roast for 20โ25 minutes, until tender.

In a bowl, mix diced tomatoes, feta, basil, remaining oil, and a pinch of salt and pepper.

Spread about 1 tsp hummus on each roasted sweet potato slice.

Top each with 1 tbsp of the tomatoโfeta mixture.

Serve immediately on a tray while warm
