Description

Mediterranean Sweet Potato Appetizer Bites are vibrant, easy-to-make snacks topped with hummus, juicy tomatoes, feta, and basil. A perfect healthy bite-size appetizer for parties, potlucks, or weeknight entertaining.


Ingredients

  • 2 medium sweet potatoes, sliced into ½-inch thick rounds

  • 2 teaspoons extra virgin olive oil, divided

  • ½ cup roasted garlic hummus

  • 1 cup diced ripe tomatoes

  • ¼ cup crumbled feta cheese

  • 2 tablespoons fresh basil, finely chopped

  • Salt and freshly ground black pepper, to taste


Instructions

  • Preheat oven to 400 °F (200 °C) and line a baking sheet with parchment paper or foil.

  • Toss sweet potato rounds with 1 tsp olive oil, salt, and pepper.

  • Arrange on the sheet in a single layer; roast for 20–25 minutes, until tender.

  • In a bowl, mix diced tomatoes, feta, basil, remaining oil, and a pinch of salt and pepper.

  • Spread about 1 tsp hummus on each roasted sweet potato slice.

  • Top each with 1 tbsp of the tomato–feta mixture.

  • Serve immediately on a tray while warm

Notes

  • For vegan version, omit feta or use a plant-based alternative.

  • Can be prepped ahead: store sweet potatoes and topping separately.

  • Swap basil with parsley or mint for a flavor twist.
