Description

A hearty casserole layered with seasoned meat, zucchini, and cheesy goodness – a perfect family-friendly dinner.


Ingredients

1 tsp salt, 2 large eggs, ⅔ cup Parmesan cheese, 1 ½ cups shredded cheese (mozzarella, cheddar, or blend), 1 ½ lb ground meat (beef, pork, sausage, chicken, turkey, or soy crumbles), ¾ cup chopped onion, 2 cups sliced mushrooms, ½ cup chopped peppers, 1 jar pasta/tomato/spaghetti sauce (or Alfredo), 1–2 tbsp Italian seasoning, 1 ½ cups shredded cheese for topping.


Instructions

1. Preheat oven to 400°F and grease a 13×9-inch baking dish. 2. Grate zucchini, salt, and let sit 15 minutes. Squeeze out liquid. 3. Mix zucchini with eggs, Parmesan, and half the cheese. Spread in dish. 4. Cook meat with onions, mushrooms, peppers; stir in sauce and seasoning. 5. Layer meat mix over zucchini, top with cheese. 6. Bake 25–30 minutes until bubbly and golden. 7. Cool before serving.

Notes

Drain zucchini well to avoid excess moisture. Make ahead and refrigerate before baking. Add cayenne or red pepper flakes for spice.
