Ingredients

1 cup ricotta cheese

1/4 cup granulated sugar

1 tablespoon lemon zest

2 tablespoons lemon juice

1/4 teaspoon salt

2 large eggs

Vegetable oil (for frying, about 2 inches deep)

Instructions

In a large bowl, whisk ricotta, sugar, lemon zest, lemon juice, and vanilla until smooth.

In another bowl, mix flour, baking powder, and salt.

Stir dry mix into wet ingredients until just combined.

Add eggs one at a time, mixing well after each.

Heat oil to 350°F in a deep skillet.

Drop tablespoon-sized scoops into hot oil, frying in batches for 3–4 minutes.

Use a slotted spoon to remove and drain on paper towels.

Dust with powdered sugar while warm.

Batter should be thick and scoopable.
