Keto Chicken Fritters – a quick, cheesy, and low-carb dish with a crispy exterior and juicy, tender inside. Perfect for snacks, meal prep, or a light dinner, ready in just 30 minutes!
Ingredients
2 ½ cups (600g) chicken breasts, cut into small cubes
1 cup (112g) red bell pepper, diced
1 ⅓ cups (110g) shredded mozzarella cheese
1 large egg
3 ½ tablespoons (50g) mayonnaise
1 ½ tablespoons fresh parsley, chopped
½ tablespoon salt
½ tablespoon paprika powder
¼ tablespoon freshly ground black pepper
1 tablespoon coconut flour
Instructions
- Mix the ingredients: In a large mixing bowl, stir together the cubed chicken, diced red pepper, shredded mozzarella, egg, mayonnaise, parsley, salt, paprika, black pepper, and coconut flour until fully combined.
- Form the patties: Prepare a baking sheet by lining it with parchment paper. Divide the mixture into 14 portions and shape each one into small patties using your hands or an ice cream scoop.
- Bake to perfection: Arrange the fritters on the baking sheet and bake in a preheated oven at 180°C (350°F) for 20–25 minutes, or until golden brown and fully cooked.
- Serve & enjoy: Serve warm with your favorite keto-friendly dip, such as sour cream or ranch dressing.
Notes
For extra crunch, pan-fry fritters for 2–3 minutes per side after baking.
Substitute mozzarella with cheddar or Parmesan for a flavor twist.
