Description

Honey Mustard Chicken Cobb Salad combines tender marinated chicken, crisp greens, creamy avocado, bacon, eggs, and feta for a hearty, flavorful salad. It’s the perfect balance of sweet, tangy, and savory, ready in under an hour!


Ingredients

For the Dressing/Marinade:

¼ cup olive oil

¼ cup honey

¼ cup Dijon mustard (or mix with whole grain mustard)

2 Tbsp apple cider vinegar

⅛ tsp salt

Cracked black pepper, to taste

For the Salad:

1 lb chicken tenders

68 cups romaine or green leaf lettuce, chopped

68 slices bacon, cooked & crumbled

4 hard-boiled eggs, sliced

¾ cup cherry tomatoes, halved

12 avocados, diced

¼½ cup feta cheese, crumbled


Instructions

1. Make the dressing/marinade

In a medium bowl, whisk together olive oil, honey, Dijon mustard (and/or whole grain mustard, if using), apple cider vinegar, and salt until smooth. Adjust seasoning with cracked black pepper. Reserve this mixture for both marinating the chicken and dressing the salad later.

2. Marinate the chicken

Place the chicken tenders in a resealable plastic bag or a shallow bowl. Pour in ¼ cup of the honey mustard dressing and toss to coat evenly. Seal or cover and refrigerate. Let the chicken marinate for a minimum of 30 minutes, or up to 2 hours to enhance the flavor.

3. Bake the chicken

Preheat your oven to 400 °F (200 °C). Spray or lightly grease a baking dish. Remove the chicken from the marinade (letting excess drip off), and place in the dish. Season with a pinch of salt, cracked black pepper, and a light dusting of paprika (optional) for color and extra flavor.
Bake for 15 to 20 minutes, or until the chicken reaches an internal temperature of 165 °F (74 °C).
Once baked, allow the chicken to rest and cool. Then slice or dice into bite‑sized pieces.

4. Assemble the salad

In a large bowl or on a platter, layer or toss together: chopped lettuce, diced chicken, cooked bacon, hard‑boiled egg slices, cherry tomato halves, and avocado pieces. Drizzle with your desired amount of the reserved honey mustard dressing. Gently toss to combine without mashing the avocado.

5. Finish & serve

Sprinkle crumbled feta cheese over the top. You can also add a final crack of black pepper or a little extra drizzle of dressing. Serve immediately—this salad is best fresh.

Notes

Adjust ingredient quantities to suit personal preference.

Use extra light olive oil for a milder flavor.

Optional: Use a Dijon + whole grain mustard combo for added texture.

Chicken can be grilled instead of baked.
