Ingredients

1 cup water

2 teaspoons minced garlic

1.2 pounds ground turkey

2 teaspoons mustard seeds

½ teaspoon salt

½ teaspoon ground black pepper

6 large eggs

6 Smart Bagels (or bagels of choice)

3 tablespoons whipped cream cheese

3 ripe avocados

6 slices Colby Jack cheese


Instructions

  • Prepare the garlic water – In a small pot, bring 1 cup of water to a boil. Add the minced garlic and cook for 6 minutes. Strain the garlic from the water, reserving 2 tablespoons of the infused liquid.

  • Make the sausage patties – In a large bowl, combine the ground turkey, mustard seeds, reserved garlic water, salt, and black pepper. Mix well, then shape into 6 equal patties.

  • Cook the patties – Heat a skillet over medium heat and cook the turkey patties for 3–4 minutes per side, until fully cooked and golden brown.

  • Cook the eggs – In a separate skillet, cook the eggs to your liking (fried, scrambled, or over-easy).

  • Prepare the spreads – Toast the Smart Bagels if desired. Spread a layer of whipped cream cheese on each bottom half. Mash the avocados in a bowl, season lightly with salt, and spread on top of the cream cheese.

  • Assemble the sandwiches – Place a slice of Colby Jack cheese over the avocado layer, add a turkey patty, then top with a cooked egg. Finish with the top half of the bagel.

  • Season and serve – Sprinkle a bit more salt and pepper if desired, and enjoy immediately!

Notes

Add lemon juice to the avocado to keep it from browning.

Make turkey patties ahead and freeze for quick assembly later.

Swap Colby Jack for cheddar, pepper jack, or your favorite cheese.

Use English muffins or sourdough as an alternative to bagels.
