Ground Beef Cabbage Soup is a hearty, veggie-packed comfort meal perfect for weeknights. Made in one pot with beef, cabbage, carrots, and tomatoes, it’s easy, flavorful, and budget-friendly.
Ingredients

1 lb ground beef (85/15)
1 tbsp olive oil
2 tsp kosher salt
1 tsp coarse ground black pepper
1 yellow onion, chopped
8 oz tomato sauce
4 cups beef broth
4 cups cabbage, cut into 1-inch chunks
2 carrots, sliced
2 stalks celery, sliced
14 oz canned diced tomatoes (do not drain)
Instructions
- Heat a large pot or Dutch oven over high heat. Add olive oil.
- Add ground beef, chopped onion, salt, and pepper. Cook for 6 to 8 minutes, breaking up the beef, until it’s browned.
- Stir in tomato sauce, beef broth, cabbage, carrots, celery, and canned diced tomatoes (with their juice).
- Bring the mixture to a boil.
- Reduce the heat to low, cover, and simmer for 20 minutes, or until the cabbage and carrots are tender.
- Taste and adjust seasoning if needed before serving.
Notes
For added flavor, use a mix of green and red cabbage.
Freeze leftovers in single portions for quick future meals.
Swap beef with turkey or plant-based crumbles for a lighter version.
