Sweet, smoky grilled peaches topped with creamy vanilla mascarpone and crunchy toasted hazelnuts. This quick and elegant dessert is perfect for summer gatherings and ready in just minutes.
Ingredients
8 oz cold mascarpone cheese
4 tbsp agave nectar, divided
½ tsp pure vanilla extract
4 ripe but slightly firm peaches, halved and pitted
¼ cup toasted hazelnuts, roughly chopped
Fresh mint leaves, for garnish
Instructions
Prepare the mascarpone topping – In a small bowl, combine mascarpone cheese with 2 tbsp agave and vanilla extract. Use a fork to gently mix until just combined, avoiding over-mixing to keep it smooth. Cover and refrigerate.
Preheat the grill – Whether using a grill pan or an outdoor grill, set it over medium-high heat.
Prep the peaches – Brush the cut sides of the peaches with the remaining 2 tbsp of agave.
Grill the peaches – Place peaches cut-side down on the hot surface until grill marks appear and the fruit is just tender. Rotate slightly if you want cross-hatch marks.
Add the mascarpone – Spoon a chilled portion of vanilla mascarpone into the center of each peach half.
Garnish & serve – Sprinkle with chopped hazelnuts, fresh mint, and, if desired, an extra drizzle of agave.
Notes
Choose peaches that are ripe but firm so they keep their shape when grilled.
For extra richness, drizzle with chocolate or caramel before serving.
Store mascarpone mixture in the fridge for up to 2 days.
