Ingredients

Chicken:

1 1/2 lbs boneless, skinless chicken breasts (about 4)

2 garlic cloves, minced

3 tbsp olive oil

1/4 cup chopped fresh cilantro

Juice of 1 lime

1/2 tsp cumin
-
1/2 tsp paprika
-
1/2 tsp salt
-
1/4 tsp black pepper
Avocado Salsa:
-
2 ripe avocados, diced
-
1 large or 2 small tomatoes, chopped

1/4 cup red onion, chopped
-
1 jalapeno, deseeded and chopped (optional)

1/4 cup chopped cilantro
-
Juice of 1 lime

Salt and pepper to taste
Instructions

In a large bowl, mix garlic, olive oil, cilantro, lime juice, cumin, paprika, salt, and pepper.

Pound chicken breasts or slice them evenly. Coat with marinade and let sit for 30 mins to 12 hrs.

Preheat grill or skillet over medium-high. Grill chicken 5โ6 mins per side until cooked through.

While cooking, mix avocado salsa ingredients in a bowl. Chill until ready to use.

Top cooked chicken with avocado salsa and serve fresh.
Notes
Use a meat thermometer to ensure chicken reaches 165ยฐF. Store chicken and salsa separately for best freshness.
