Description
Easy Taco Casserole is a quick and delicious dinner that layers ground beef, beans, salsa, cheese, and crushed chips. It’s cheesy, crunchy, and packed with taco flavor — perfect for busy nights or feeding a crowd.
Ingredients
1tablespoon olive oil
1pound lean ground beef
½medium onion, chopped
1tablespoon chili powder
½teaspoon garlic powder
½teaspoon ground cumin
2cups crushed Doritos (I used Nacho Cheese flavor)
1(14ounce) can black beans, drained & rinsed
1(12ounce) can corn, drained
1(15.5ounce) jar salsa (use your favorite kind)
2cups shredded Mexican cheese blend (or substitute with cheddar), separated for layering.
Toppings (optional, to taste): tomatoes, cilantro, scallions, avocado, black olives, sour cream, lettuce, etc.
Instructions
- Preheat your oven to 350°F (about 175°C) and place the oven rack in the middle position.
- Warm the olive oil in a skillet over medium-high heat. Add the ground beef and cook for about 5 minutes, breaking up the meat as you go.
- Stir in the chopped onion, chili powder, garlic powder and ground cumin. Continue cooking for another 5 minutes until the onion softens and the beef is well-seasoned.
- Meanwhile, take a 9×13-inch (or similar) casserole dish, and spread the crushed Doritos evenly across the bottom.
- If there’s excess fat in the skillet, you can spoon most of it out. Then stir in the black beans, corn, salsa, and half of the shredded cheese. Let the mixture warm through, just until the cheese begins to melt.
- Spoon the beef-bean-corn-salsa mixture evenly over the layer of Doritos in the casserole dish.
- Top the casserole with the remaining cheese.
- Bake uncovered for 15-20 minutes, or until everything is warm and the cheese is nicely melted and lightly bubbling.
- While it’s baking, prep your toppings of choice.
- Serve the casserole straight from the dish, with the toppings on the side so each person can add what they like.
Notes
Customize with your favorite toppings like tomatoes, avocado, or sour cream. Make it ahead and bake later. For best results, bake uncovered to keep the chips crisp.
