Description

Easy Egg Bites are a delicious and protein-rich breakfast you can prep in advance. Baked in a muffin tin and loaded with eggs, bacon, cheese, and fresh veggies, they’re quick to make, freezer-friendly, and perfect for busy mornings or healthy snacking.


Ingredients

Scale

1/2 cup chopped baby greens (such as spinach)

1 small tomato, diced and seeds removed

4 slices bacon, cooked and crumbled

1/4 cup shredded cheddar cheese

7 large eggs

1/4 cup milk (or unsweetened almond milk)

Salt and pepper, to taste


Instructions

  • Preheat your oven to 350°F (175°C).
  • Generously spray a 12-cup muffin tin with nonstick spray to prevent sticking.
  • In a mixing bowl, whisk together the eggs, milk, salt, and pepper until fully combined.
  • Evenly distribute the chopped greens, diced tomato, crumbled bacon, and shredded cheese into each muffin cup (about 1 tablespoon each).
  • Pour the egg mixture into each muffin slot, filling just below the top to allow for expansion while baking.
  • Bake for 20 minutes, or until the centers are set. If the tops appear undercooked, bake in 3-minute increments until done.
  • Remove from oven and let cool slightly before serving.

Notes

Use silicone muffin liners for easy cleanup.

You can mix all ingredients together instead of layering.

Great for meal prep—store in fridge or freezer.
