Description

This Crustless Spinach Quiche is a savory, cheesy, low-carb favorite made in one pan. It’s quick to prep, packed with protein, and perfect for brunch or weekday meals.


Ingredients

1 tablespoon vegetable oil

1 medium onion, finely chopped

1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry

5 large eggs, lightly beaten

1/4 teaspoon salt

1/8 teaspoon ground black pepper

3 cups shredded Muenster cheese


Instructions

  • Preheat and Prepare: Preheat your oven to 350°F (175°C) and lightly grease a 9-inch pie dish.
  • Sauté the Aromatics: Heat vegetable oil in a skillet over medium-high heat. Add the chopped onion and cook for about 3 minutes, stirring occasionally, until softened.
  • Add Spinach: Stir in the thawed, drained spinach. Cook for an additional 2-3 minutes until the mixture is dry and no excess moisture remains.
  • Mix the Filling: In a large bowl, whisk together the eggs, salt, and pepper. Add the shredded cheese and spinach-onion mixture. Stir until fully combined.
  • Bake: Pour the mixture into the prepared pie pan. Bake for 30 minutes or until the quiche is set and the top is lightly golden.
  • Cool and Serve: Allow the quiche to rest for 10 minutes after baking before slicing and serving.

Notes

For best texture, squeeze spinach thoroughly to remove excess water.

Try adding cooked bacon or switching up cheeses like feta or Swiss for variation.
