Description

Crockpot Garlic Parmesan Chicken and Potatoes is an easy one pot dinner loaded with flavor. Juicy chicken, seasoned potatoes, garlic Parmesan sauce and melty mozzarella make this slow cooker recipe a perfect weeknight comfort meal.


Ingredients

1 lb chicken breasts

5 medium sized potatoes

2 tbsp olive oil

Salt, pepper, garlic powder, paprika (for potatoes)

½ tsp each of salt and pepper (for chicken)

1 tsp each of paprika, onion powder, Italian seasoning (for chicken)

2 tbsp minced garlic

Garlic Parmesan sauce (enough to coat chicken)

1 cup shredded mozzarella cheese


Instructions

  • Wash the potatoes and cut them into small cubes, keeping pieces even for uniform cooking.

  • Spray your crockpot with cooking spray to prevent sticking.

  • Add the cubed potatoes to the crockpot. Drizzle with olive oil and season with salt, pepper, garlic powder and paprika.

  • Add the minced garlic and stir until the potatoes are fully coated in seasoning.

  • Cube the chicken breasts and season with ½ tsp each of salt and pepper, and 1 tsp each of paprika, onion powder and Italian seasoning.

  • Layer the seasoned chicken over the potatoes in the crockpot.

  • Pour enough garlic Parmesan sauce to just coat the chicken. You can always add more after cooking if needed.

  • Cover and cook on low for about 6 hours, or until potatoes are tender and chicken is fully cooked.

  • Stir the mixture well to blend the flavors.

  • Sprinkle the shredded mozzarella cheese on top and cover again just until the cheese melts.

 

  • Serve warm. Optional: drizzle with ranch dressing for extra flavor.


Notes

Cut potatoes evenly to ensure even cooking.

Use freshly shredded mozzarella for best melt.

Slow cookers vary—check doneness earlier if needed.

Leftovers reheat well and can be crisped in a skillet.
