Ingredients
3 boneless, skinless chicken breasts (1 1/2 to 2 pounds)
1 tsp kosher salt
1/2 tsp black pepper
1 tsp garlic powder
1/2 tsp dried Italian seasoning
1 can (14.5 oz) green beans, drained
1 box (6 oz) chicken stuffing mix
1 can (10.5 oz) low-sodium cream of chicken soup
1 1/4 cups low-sodium chicken broth, divided
1/4 cup sour cream
1/4 cup butter, melted
Instructions
- Spray a 6-quart crockpot with nonstick cooking spray. Lay the chicken breasts in a single layer at the bottom.
- In a small bowl, mix together the salt, pepper, garlic powder, and Italian seasoning. Sprinkle this blend evenly over both sides of the chicken.
- Add the green beans on top of the seasoned chicken.
- Pour the dry stuffing mix over the green beans, spreading it out in an even layer.
- In a separate bowl, whisk together the cream of chicken soup, 1 cup of chicken broth, sour cream, and melted butter until smooth. Pour this mixture over the stuffing without stirring.
- Cover and cook on high for 4 to 5 hours or on low for 6 to 7 hours, until the chicken reaches an internal temperature of 165°F.
- When finished, fluff the stuffing gently with a fork. If it appears too dry, stir in the remaining 1/4 cup of chicken broth.
