Ingredients
1 medium yellow onion, thinly sliced
4 garlic cloves, finely chopped
1 lb thin-cut boneless, skinless chicken breasts (about 3)
1 tsp kosher salt, plus more to taste
1/2 tsp freshly ground black pepper
1/4 cup all-purpose flour
2 tbsp olive oil
1/2 cup low-sodium chicken broth
1/2 cup heavy cream
1/4 cup sour cream
1 tbsp soy sauce
1 tsp apple cider vinegar
1/4 tsp garlic powder
1/4 tsp red pepper flakes
1 tbsp unsalted butter
5 oz baby spinach (about 5 packed cups)
Cooked pasta or steamed rice, for serving
Instructions
Slice onion and mince garlic.
Pat chicken dry, season with salt and pepper, and coat lightly with flour.
Sear chicken in olive oil, 1.5 minutes per side, then set aside.
Whisk together broth, heavy cream, sour cream, soy sauce, vinegar, and garlic powder.
Sauté onions in butter until soft, then add garlic and red pepper flakes.
Stir in cream mixture, simmer 3–4 minutes.
Fold in spinach until wilted. Return chicken to skillet and cook until fully done.
Serve over pasta or rice.

Use gluten-free flour for a gluten-free version.
