  • 1 medium yellow onion, thinly sliced

  • 4 garlic cloves, finely chopped

  • 1 lb thin-cut boneless, skinless chicken breasts (about 3)

  • 1 tsp kosher salt, plus more to taste

  • 1/2 tsp freshly ground black pepper

  • 1/4 cup all-purpose flour

  • 2 tbsp olive oil

  • 1/2 cup low-sodium chicken broth

  • 1/2 cup heavy cream

  • 1/4 cup sour cream

  • 1 tbsp soy sauce

  • 1 tsp apple cider vinegar

  • 1/4 tsp garlic powder

  • 1/4 tsp red pepper flakes

  • 1 tbsp unsalted butter

  • 5 oz baby spinach (about 5 packed cups)

  • Cooked pasta or steamed rice, for serving


Instructions

  • Slice onion and mince garlic.

  • Pat chicken dry, season with salt and pepper, and coat lightly with flour.

  • Sear chicken in olive oil, 1.5 minutes per side, then set aside.

  • Whisk together broth, heavy cream, sour cream, soy sauce, vinegar, and garlic powder.

  • Sauté onions in butter until soft, then add garlic and red pepper flakes.

  • Stir in cream mixture, simmer 3–4 minutes.

  • Fold in spinach until wilted. Return chicken to skillet and cook until fully done.

  • Serve over pasta or rice.

  • Use gluten-free flour for a gluten-free version.

  • For extra thickness, simmer longer or add cornstarch slurry.
