Ingredients
2 cups diced, cooked chicken breast
2 cups chopped fresh broccoli florets
2 cups cooked white or brown rice
1 can (10.5 oz) cream of chicken soup
1/2 cup sour cream
1/2 cup milk
1 1/2 cups shredded cheddar cheese, plus extra for topping
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper, to taste
1/2 cup crushed Ritz crackers or breadcrumbs
1 tablespoon melted butter
Instructions
Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
In a large bowl, mix chicken, broccoli, rice, soup, sour cream, milk, cheese, garlic powder, onion powder, salt, and pepper.
Spread mixture evenly in the baking dish.
Combine crackers or breadcrumbs with melted butter and sprinkle on top. Add extra cheese if desired.
Bake uncovered for 25–30 minutes until bubbly and golden.
Let rest 5 minutes before serving.
Notes
Use rotisserie chicken to save time. Swap veggies or soup type based on what you have. Great for make-ahead meals or freezing.
