Ingredients

  • 2 cups diced, cooked chicken breast

  • 2 cups chopped fresh broccoli florets

  • 2 cups cooked white or brown rice

  • 1 can (10.5 oz) cream of chicken soup

  • 1/2 cup sour cream

  • 1/2 cup milk

  • 1 1/2 cups shredded cheddar cheese, plus extra for topping

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • Salt and pepper, to taste

  • 1/2 cup crushed Ritz crackers or breadcrumbs

  • 1 tablespoon melted butter


Instructions

  • Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.

  • In a large bowl, mix chicken, broccoli, rice, soup, sour cream, milk, cheese, garlic powder, onion powder, salt, and pepper.

  • Spread mixture evenly in the baking dish.

  • Combine crackers or breadcrumbs with melted butter and sprinkle on top. Add extra cheese if desired.

  • Bake uncovered for 25–30 minutes until bubbly and golden.

  • Let rest 5 minutes before serving.

Notes

Use rotisserie chicken to save time. Swap veggies or soup type based on what you have. Great for make-ahead meals or freezing.
