Description
These Cranberry and Feta Pinwheels combine sweet dried cranberries, tangy feta, and creamy cheese in soft tortillas for a festive, no-bake appetizer perfect for holidays, parties or everyday snacking.
Ingredients
ยพ cup dried sweetened cranberries
1 (8 oz) package cream cheese, room temperature
ยพ cup crumbled feta cheese
ยผ cup chopped green onion
2 large flour tortillas (wheat or spinach for color)
Instructions

In a mixing bowl, combine the cream cheese (softened), crumbled feta, dried cranberries and chopped green onion. Mix thoroughly until evenly distributed.

Lay out the two tortillas flat on your work surface. Divide the cheese-cranberry mixture evenly between the two tortillas and spread each mixture across a tortilla so that the mixture reaches near to the edges.

Starting from one long side of each tortilla, roll up the tortilla tightly into a log. Wrap each log tightly in plastic wrap or cling film.

Refrigerate the wrapped logs for at least one hour (this helps the cheese set and makes clean slicing easier).

When ready to serve, unwrap the logs and slice each into 12 equal pieces (so youโll end up with about 24 pinwheel slices total). Arrange the pinwheels on a platter and serve.
Notes
Do not use reduced-fat fetaโitโs too dry.
You can make the rolls 1โ2 days in advance and slice before serving.
Add a teaspoon of milk if the filling is too stiff.
Use spinach tortillas for added color.
