Ingredients
Chicken Wings:
Nonstick cooking spray
1 tbsp lemon zest
1 tsp baking powder
1 tsp kosher salt
1/4 tsp black pepper
3 lbs chicken wings (drumettes and flats)
Lemon wedges (optional)
Chimichurri Sauce:
2 cups chopped fresh parsley (stems and leaves)
1/2 cup extra-virgin olive oil
2 tbsp red wine vinegar
1 tbsp lemon juice
1 medium jalapeño, halved and stemmed
2 garlic cloves
1/2 tsp dried oregano
1/2 tsp red pepper flakes
1/2 tsp kosher salt
1/4 tsp black pepper
Instructions
Line a baking sheet with foil and add a wire rack. Spray with nonstick spray.
Mix zest, baking powder, salt, and pepper. Pat wings dry, coat in the mixture.
Chill wings uncovered in the fridge for 1–4 hours.
Blend chimichurri ingredients until chunky. Adjust seasoning.
Roast wings at 425°F for 55–60 mins, flipping halfway, or grill for 25–30 mins, turning every 5 mins.
Toss wings with chimichurri and serve with lemon wedges.
Notes
Chimichurri can be made ahead and stored up to 5 days.
Drying wings in the fridge enhances crispiness.
Grill for smoky flavor or roast for convenience.
