Description

Chicken Noodle Casserole is creamy, hearty, and family-friendly. With tender chicken, egg noodles, and a buttery cracker topping, this easy casserole is perfect for busy weeknights or gatherings.


Ingredients

4 boneless, skinless chicken breasts

6 ounces egg noodles

1 (10.5-ounce) can condensed cream of mushroom soup

1 (10.5-ounce) can condensed cream of chicken soup

1 cup sour cream

Salt and black pepper, to taste

½ cup butter, melted

1 cup crushed buttery round crackers


Instructions

  1. Preheat oven: Set to 350°F (175°C).
  2. Cook the chicken: Poach chicken breasts in simmering water for about 12 minutes until fully cooked. Remove and cut into bite-sized cubes.
  3. Cook the noodles: Add egg noodles to boiling water and cook until al dente, about 10 minutes. Drain well.
  4. Mix the filling: In a large bowl, combine chicken, noodles, soups, and sour cream. Season with salt and pepper.
  5. Assemble the casserole: Pour the mixture into a 2-quart baking dish.
  6. Make the topping: Melt butter and mix with crushed crackers. Sprinkle over the top.
  7. Bake: Cook for 30 minutes or until golden and bubbly.

Notes

Use rotisserie chicken to save time.

Add peas, carrots, or broccoli for extra nutrition.

Assemble ahead and refrigerate or freeze before baking.
