2 small chicken breasts, cut into ยฝ-inch pieces

1 Italian-style loaf

2 tablespoons poultry seasoning (or salt, pepper, garlic powder)

1ยฝ sticks unsalted butter

2 tablespoons minced garlic (or garlic paste)

2 tablespoons chopped parsley

1 teaspoon crushed red pepper flakes

2 tablespoons olive oil

ยผ cup shredded parmesan cheese

ยฝ cup shredded mozzarella cheese

ยฝ cup heavy cream


Instructions

  • Prepare the Chicken: Place the chicken pieces in a bowl. Drizzle with 1 tablespoon of olive oil and sprinkle with 1 tablespoon of poultry seasoning or a homemade blend of salt, pepper, and garlic powder. Cook in a pan over medium heat until golden brown.
  • Toast the Bread: Slice the Italian loaf lengthwise. In a bowl, mix 1 stick of melted butter with 1 tablespoon minced garlic, 1 tablespoon chopped parsley, and 1 teaspoon red pepper flakes. Spread this mixture evenly over both bread halves. Toast in a 350ยฐF oven for 5-10 minutes, checking frequently.
  • Make the Alfredo Sauce: Using the same pan, melt ยฝ stick of butter over medium-low heat. Add 1 tablespoon minced garlic and cook for 2-3 minutes. Reduce the heat to low, then stir in ยฝ cup heavy cream, ยผ cup parmesan, and 1 tablespoon parsley. Simmer until the sauce thickens, about 3-5 minutes.
  • Assemble and Bake: Spread half the Alfredo sauce over the toasted bread. Top with cooked chicken and shredded mozzarella. Drizzle the remaining sauce on top. Return to the oven for 5 minutes or until the cheese is melted and bubbly.

Notes
