For the Sausage Gravy:

  • 1 lb ground sausage

  • 3 tablespoons flour

  • 34 tablespoons vegetable oil (if sausage is lean)

  • 45 cups milk

  • Salt and pepper, to taste (about 1½ teaspoons each)

  • Optional: 1 teaspoon cornstarch + 1 tablespoon cold water slurry


Instructions

  1. Make the Dough: In a bowl, mix warm water with yeast. Once frothy, add sour cream, flour, salt, oil, and sugar. Knead until smooth. Let rise in a warm place until doubled (about 1 hour).

  2. Prepare Filling: Cook sausage in a skillet until browned. Scramble eggs. Grate cheese.

  3. Assemble Rolls: Roll dough into a rectangle. Layer sausage, eggs, and cheese. Roll up and slice into 12 pieces.

  4. Bake: Arrange on greased baking sheet. Bake at 350°F for 25 minutes or until center reaches 190°F.

  5. Make Gravy: Brown sausage, whisk in flour and oil, cook 1 minute. Gradually add milk, stir constantly until thickened. Season.

  6. Serve: Top warm rolls with sausage gravy and enjoy immediately.

  • Don’t overfill the rolls—moisture from sausage and eggs can affect texture.
