Ingredients

2¼ teaspoons instant yeast
½ cup full-fat sour cream (125g)
4 cups bread flour (500g)

For the Filling:
½ lb ground sausage (mild or spicy)
6 large eggs, scrambled
1½ cups shredded cheese (cheddar, mozzarella, etc.)
For the Sausage Gravy:
1 lb ground sausage
3 tablespoons flour
3–4 tablespoons vegetable oil (if sausage is lean)
4–5 cups milk
Salt and pepper, to taste (about 1½ teaspoons each)
Optional: 1 teaspoon cornstarch + 1 tablespoon cold water slurry
Instructions
Make the Dough: In a bowl, mix warm water with yeast. Once frothy, add sour cream, flour, salt, oil, and sugar. Knead until smooth. Let rise in a warm place until doubled (about 1 hour).
Prepare Filling: Cook sausage in a skillet until browned. Scramble eggs. Grate cheese.
Assemble Rolls: Roll dough into a rectangle. Layer sausage, eggs, and cheese. Roll up and slice into 12 pieces.
Bake: Arrange on greased baking sheet. Bake at 350°F for 25 minutes or until center reaches 190°F.
Make Gravy: Brown sausage, whisk in flour and oil, cook 1 minute. Gradually add milk, stir constantly until thickened. Season.
Serve: Top warm rolls with sausage gravy and enjoy immediately.
Notes
Don’t overfill the rolls—moisture from sausage and eggs can affect texture.
Rolls can be frozen before or after baking.
