Description

A hearty breakfast casserole loaded with eggs, sausage, veggies, and cheese. Perfect for make-ahead breakfasts or brunches.


Ingredients

Scale
  • 2 lbs pork sausage
  • 12 large eggs
  • 1 cup sour cream
  • 1/4 cup milk
  • 1 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 4 green onions, chopped
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. Whisk eggs, sour cream, milk, cheese, salt, and pepper.
  3. Brown sausage, drain, and add to egg mixture.
  4. Sauté peppers and onions for 2–3 minutes, then mix in.
  5. Pour into dish and bake for 35–50 minutes.
  6. Cool slightly, slice, and serve.

Notes

  • Assemble the night before for convenience.
  • Add 5–10 extra minutes if baking from chilled.
  • Freeze for up to 2 months.
