Description

A rich and flavorful Bananas Foster topping for mini cheesecakes, combining caramelized bananas with a hint of rum.


Ingredients

  • 4 tablespoons unsalted butter
  • 1/2 cup packed light brown sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of kosher salt
  • 2 to 4 bananas, depending on size, sliced on the bias
  • 1/2 cup dark rum
  • 12 mini cheesecakes

Instructions

  1. Place a skillet over medium heat and melt the butter.
  2. Add the brown sugar, vanilla, cinnamon, and salt. Mix well and cook until the sugar dissolves, 1 to 2 minutes.
  3. Gently stir in the sliced bananas and cook until softened but not mushy, 1 to 2 minutes.
  4. Remove the skillet from the heat and stir in the rum.
  5. Return the skillet to medium heat and bring the mixture to a simmer.
  6. Let the topping cool for 2 minutes.
  7. Arrange the cheesecakes on a serving platter.
  8. Spoon a heaping tablespoon of the topping over each cheesecake.
  9. Serve immediately.
