Ingredients
1 whole grain English muffin (split)
1 slice center-cut bacon
1 large egg
1 slice sharp cheddar cheese
Non-stick cooking spray
Instructions
Place bacon in air fryer basket or top rack. Cook at 375°F for 3–5 minutes until crispy.
Spray a mini pie tin or ramekin, crack in the egg. Add the egg and muffin halves (cut sides up) to air fryer. Cook for 3–5 minutes.
Top one muffin half with cheese, return to warm air fryer for 1 minute to melt.
Cut bacon in half, layer with egg and cheesy muffin to assemble sandwich
Notes
Use silicone or metal molds for shaping eggs. Adjust cook times for preferred crispiness. Refrigerate pre-assembled sandwiches for 3 days and reheat in the air fryer at 350°F.
