Description

4th of July Brownie Bites are the ultimate festive mini dessert—easy to make, perfectly portioned, and bursting with red, white, and blue! These bite-sized treats are topped with whipped cream, strawberries, blueberries, and fresh mint, making them perfect for patriotic parties, BBQs, and potlucks. A total crowd-pleaser!


Ingredients

  • 1 package Simple Mills Paleo Brownie Mix

  • ½ cup avocado oil (or fat of choice)

  • 3 tablespoons water

  • 2 eggs

  • Olive oil spray (or nonstick spray)

  • Oat milk whipped cream

  • ½ cup fresh strawberries, sliced

  • ¼ cup fresh blueberries

  • Fresh mint, either finely chopped or as small sprigs


Instructions

  1. Preheat oven to 375°F. Grease a mini muffin tin with spray.

  2. Mix brownie mix, avocado oil, water, and eggs until smooth.

  3. Scoop about 1 tbsp of batter into each muffin cup, filling only ⅔ full.

  4. Bake for 10 minutes, let cool for 10 minutes, then transfer to a cooling rack.

  5. Repeat with remaining batter.

  6. Once cool, top with oat milk whipped cream, a strawberry slice, one or two blueberries, and a small mint sprig.

  7. Serve immediately or add toppings just before serving.

Notes

  • Don’t top with whipped cream too early—wait until serving to prevent melting.

  • Use a cookie scoop for evenly-sized brownie bites.

  • Store plain bites in a sealed container for up to 3 days; freeze for longer storage.
