Ingredients
1 package Simple Mills Paleo Brownie Mix
½ cup avocado oil (or fat of choice)
3 tablespoons water
2 eggs
Olive oil spray (or nonstick spray)
Oat milk whipped cream
½ cup fresh strawberries, sliced
¼ cup fresh blueberries
Fresh mint, either finely chopped or as small sprigs
Instructions
Preheat oven to 375°F. Grease a mini muffin tin with spray.
Mix brownie mix, avocado oil, water, and eggs until smooth.
Scoop about 1 tbsp of batter into each muffin cup, filling only ⅔ full.
Bake for 10 minutes, let cool for 10 minutes, then transfer to a cooling rack.
Repeat with remaining batter.
Once cool, top with oat milk whipped cream, a strawberry slice, one or two blueberries, and a small mint sprig.
Serve immediately or add toppings just before serving.
Notes
Don’t top with whipped cream too early—wait until serving to prevent melting.
Use a cookie scoop for evenly-sized brownie bites.
Store plain bites in a sealed container for up to 3 days; freeze for longer storage.
